Southwestern Style Steak Salad
 2 - 12 oz. MJB sirloin steaks 1 1/2 cups prepared salsa 15 oz. Can Black Beans, drained & rinsed 1 cup frozen corn, thawed Ingredients - 4 Servings  8 cups lettuce or salad mix 1/2 cup ranch dressing 1 cup broken tortilla chips Sliced jalapeƱo peppers to taste (optional)
Preparation and Assembly
Place the steaks, along with 1 cup of salsa in a zipper bag and marinade in the fridge for as long as possible (An hour at the minimum, 3 or 4 if possible and up to overnight). When the time is right, remove the steaks from the bag and discard the marinade. Grill or sear the steaks to your desired doneness, and allow it to rest for 10 - 15 minutes. While the steaks are resting, mix whisk together the other 1/2 cup of salsa and the 1/2 cup ranch dressing. Set aside. Arrange the lettuce on four plates and top with black beans, corn and jalapeƱos. Slice the steaks into 1/4 inch slices, and arrange them on top of the salads. Add broken tortillas, drizzle with the dressing and serve. Serving Plan B: Lay out dishes of ingredients buffet-style and let folks build their own salads!
Bulgogi (Korean Sesame Beef)
Ingredients - Marinade Preparation
2 pounds of MJB 3/8" beef strips 1/2 cup soy sauce 1/3 cup sugar 3 tablespoons sake, rice wine or sherry 2 tablespoons sesame oil 8 cloves garlic, minced 4 green onions, minced 2 tablespoons toasted sesame seeds* 1/2 teaspoon fresh black pepper 2 tablespoons cooking oil Ingredients - Dipping Sauce 2 tablespoons cooking oil 2 cloves garlic, minced 2 teaspoons toasted sesame seeds 2 teaspoons green onions, minced 1 teaspoon sriracha sauce (more or less as desired) salt and pepper to taste Combine all ingredients and mix well.
Place all ingredients in a large bowl and mix until the sugar is disolved. Add beef strips to the bowl and stir to coat well (or place beef and marinade in a large zipper bag). Allow the beef to luxuriate in the marinade for 30 minutes on the counter or 8 hours in the fridge. When you're ready to cook, heat a tablespoon of oil in a sturdy skillet over medium-high heat until it starts to shimmer. Use a slotted spoon (or your hand) to remove from the marinade enough beef to cover the bottom of the skillet. Add the beef to the hot oil in a single layer and stir fry until it is cooked through and crispy around the edges. Transfer the beef to a plate and repeat the process, adding oil as needed. * To toast sesame seeds, heat a skillet over medium-high heat and add sesame seeds. Toss or stir until golden brown.
